Taco...Sunday?

Bottom Line These took us literally 12 minutes to make, and were tasty and fulfilling. Could be a lovely weekend brunch or a snappy weekday breakfast.

 

We were feeling very, very lazy this morning. It's mother's day - so we are used to traveling to see our mothers, or at least going out to a delicious brunch at chicago q. If you haven't had their fried green tomato benedict, you and your mom are missing out. Anyway, we did have to eat, and we had to eat some leftover tomatoes, and eggs that might end up spoiled if we waited to eat them.



So, I made some breakfast tacos, and honestly, was surprised by how tasty they were given the amount of time and effort put in. They were inspired by one of my best friends - hey Seonah! Hope you're cool with being shouted out on the blog! I have 12 followers! - who I often took the train to visit in NYC when I was in grad school in Philly. She mixed salsa into eggs for breakfast, and it was awesome. Below you will find a photo of us in my apartment in Philly. We are big halloween fans.

Rabbits and turtles aside, I haven't tested this recipe in the non-corona time, where I'm rushing out the door at 5:55am, so I don't know if this really is a weekday morning recipe in real life. But, it definitely is a weekday recipe if you're not expected at work until 9am. It's that quick. Also, for sure an easy, fulfilling and delicious dinner recipe.


So spend 12 minutes, and make a spicy tomatoey eggy taco, and enjoy your non-in-person mothers day.
